The Healthy Eating Program that Changed Our Kids’ Behavior and Improved Their Health

About six months ago, I decided to explore a new eating program, and I encouraged my husband Tom to join me. I had been reading about the “Primal Food Movement,” which is also referred to as “Paleo” eating, and I wanted to see if it would make a difference in our energy level and our overall health.

There wasn’t that much difference between The PureBalance 80/20 Food Guidelines and the Paleo program. Our diet consisted of eating lots of green vegetables; healthy fats; grass-fed, antibiotic- and hormone-free beef; free-range chicken, and wild caught fish. We also consumed limited amounts of sprouted or gluten-free grains; fruits, such as berries, and whole milk dairy products. The major change between “Paleo” and our eating program was the elimination of grains and legumes.

To tell you the truth, Tom and I already ate limited amounts of grains and legumes, so the difference we experienced wasn’t as noticeable as I had hoped. However, when I started preparing “Paleo” and gluten-free dinners for the entire family, I began to notice changes in our children’s health and behavior. And, even more important, the kids noticed the changes, too!

Since I began modifying our weeknight dinner menu, the Bayne kids have become more focused at school and more compliant at home when asked to do something. The tummy aches that used to plague them ceased. And best of all, they slept better.

Don’t get me wrong, my kids aren’t perfect and their diet isn’t “100 percent clean.” They still enjoy eating special lunches at school or eating pizza with friends on the weekends. But what I learned is that even a moderate change can make a tremendous difference in their overall health and well-being.

As a physician, I am acutely aware of the connection between diet, health and behavior. I’ve had parents seek my advice about how they can restore their child’s immune system or alleviate symptoms of Attention Deficit Disorder or Hyperactivity without pharmaceutical drugs. Based on the results of my family’s experience, I am now even more firmly convinced that all health challenges begin and end with food, and even small changes can make a difference.

The Paleolithic Eating Program

There are numerous books and websites devoted to “Paleo” eating. Paleo is short for Paleolithic (as in our hunter-gatherer ancestors). The core principle of the Paleo program is eating real, whole food. This includes high-quality proteins, fruits, vegetables, and healthy fats.

What I love most about preparing dinners based on this program is the simplicity. When I say it’s simple, here are the basics:

  • Eat lots of vegetables and limited amount of fruits
  • Eat grass-fed meats, free-range chicken, wild-caught fish and seafood
  • Choose healthy fats like avocados, olive oil, coconut oil, butter and ghee
  • Eat raw nuts and seeds
  • Avoid all processed, refined and modern foods
  • Eliminate grains and legumes, especially gluten-containing grains like wheat, barley, and rye.
  • Avoid dairy products or only consume whole fat dairy and/or fermented form
  • Avoid all processed and refined sugars (Yes, this is difficult!)

When making Paleo eating a way of life, it also can lead to long-term health benefits for the entire family.

Why is this eating program so dramatically effective for children (and adults)?

When eating a diet high in processed foods or grains, neither the brain nor the body receive the nutrients necessary for normal function. Eating too many grains can lead to erratic spikes in blood sugar, causing a foggy brain, fatigue, and muscular weakness. Over time, this leads to inflammation (pain), and the potential to develop blood sugar imbalances, ranging from hypoglycemia (low blood sugar) to hyperglycemia (diabetes). Hypoglycemic kids tend to do poorly in school; can be hyperactive; experience inordinate fatigue, and suffer from mood swings or outbursts of anger.

Are the Bayne Kids 100 percent onboard with the program? Believe me, like all children it’s hard to resist the pull of eating goodies with friends when away from home. But I have encouraged them to seek out gluten-free options whenever possible, which helps them develop responsible habits for what they’re eating, as well as become more aware of what they need to do for their own health and well-being.

A Plan of Action for Working or Busy Moms

I’m a working (and busy) mom, too. My children are involved in after-school activities and extracurricular sports. So I had to find an eating program that was going to fit my family’s lifestyle. In the beginning, the biggest challenge was what to feed them for breakfast. I decided that eating protein in the morning was essential. So breakfast in our household consists of a combination of the following options:

  • Eggs
  • Waffles or pancakes made from coconut flour or almond flour (I pre-make and freeze them)
  • Banana bread made with coconut or almond flour
  • Whole-milk or Greek yogurt with berries and nuts
  • Smoothies made with whey protein and berries (organic and frozen)

In addition, all snacks are baked with either coconut or almond flour, I have completely eliminated regular flour from my pantry.

My children still love grains. When I serve them at home, our family only eats gluten-free grains: quinoa, brown or black rice, millet, amaranth, or steel-cut oats. The grains are always soaked overnight (sprouted) before cooking.

The keys to successfully making any change are information, organization and preparation. But rather than give you a checklist, I want to demonstrate the simplicity of making this lifestyle change during a free food preparation and cooking class.

Are Grains Really Good For You?

“Let food be thy medicine, and medicine be thy food.”- Hippocrates

We are led to believe that grains are an essential element in a healthy diet. We are told that eating high-fiber whole grains may help reduce the risk of heart disease, prevent or treat diabetes, and reduce cholesterol. Grains occupy the entire base and largest space on the food pyramid.  Should we question whether they are healthy for us?

Interestingly, scientific and historical research shows that humans have not always consumed grains, and in fact some would argue the body was not designed to function on grains at all! Based on this research we have asked our patients to reduce their intake of grains and in some cases we are suggesting to go grain free. Grains include processed and whole grain products such as wheat, barley, rye, oats, spelt, teff, rice, amaranth, millet, buckwheat, sorghum, and corn. These grains are used to make products like cereal, crackers, cookies, breads, and pasta. Grains contain anti-nutrients and cause big fluctuations in insulin levels, which promotes inflammation in the body.  Let’s discuss each of these issues in detail.

Reason #1:

Grains contain anti-nutrients.

Anti-nutrients are elements within a food that either prevent or disrupt the proper digestion and absorption of nutrients contained in that food. The more grains you eat the more anti-nutrients you have in your diet. If you eat cereal for breakfast, a sandwich for lunch, and a bowl of pasta for dinner you are being exposed to a huge amount of anti-nutrients.  Phytates are anti-nutrients. Phytates make minerals bio-unavailable as they bind to the minerals in our foods and prevent their absorption. Minerals like calcium, magnesium, iron, and zinc are crucial for health and healing, but in the presence of phytates they are blocked from being absorbed by the body. This causes mineral deficiency which can result in a wide variety of symptoms that include, but are not limited to, suppressed immunity, fatigue, insomnia, irritability, heart palpitations, muscle cramps, constipation, hormonal imbalance, restless leg syndrome, muscle spasms, asthma, migraines, PMS and infertility.

Lectins are anti-nutrients that are sugar-binding proteins resistant to digestive enzymes and stomach acid. Lectins stick to the cells in the lining of the small intestines causing a weakness in digestive function. They are sticky like glue, and their stickiness is what clogs your digestive tract and blocks the absorption of nutrients. Overconsumption of lectin rich foods can build up over the years and cause sludge to form on your bowel walls keeping the intestines in a constant state of inflammation.

One way to address the problem of anti-nutrients in grains is to soak and/or sprout them. Some cultures prepare their grains by sprouting and soaking them before preparation and eating. This process dramatically reduces anti-nutrients and makes the actual nutrients present in grains available for absorption. If sprouting and soaking your own grains is not an option there are many health food stores and supermarkets that are already fully stocked with sprouted-grain products. Sprouted-grain breads are easy to find in the freezer section of most grocery stores.


Reason #2:

Grains contain gluten.

Gluten is the protein component in wheat, rye, and barley.  It makes pizza dough stretchy, gives bread its spongy texture, and is used to thicken sauces and soups. The latest research from the Centers for Disease Control (CDC) estimates that around 1% of the population has Celiac’s disease, an autoimmune response to gluten that damages the small intestine. A Celiac patient reacts to trace amounts gluten in their diet. Although only a small percentage of people have Celiac’s, research shows a larger percentage of the population is sensitive to gluten and wheat. Some researches estimate that 30-40% of people of European decent are gluten intolerant. In addition to that Allopathic medicine has recently recognized a new group of diagnoses called non-celiac gluten sensitivity disorders. These conditions include digestive issues, cognitive and behavioral disorders, and neurological conditions that are caused by immune reactions to gluten in the diet.  Unfortunately for many, the long-term results of consuming gluten can cause permanent damage to their immune and nervous systems.

Gluten free grains such as millet, amaranth, rice, buckwheat, sorghum, corn and teff also contain anti nutrients, cause insulin fluctuations and promote inflammation in the body.  We recommend these grains in limited amounts. Pure oatmeal does not contain gluten, but most oatmeal brands on the market today are not pure — they contain oats that have been cross-contaminated with small amounts of wheat, barley and/or rye.

Reason # 3:

Grain consumption causes spikes in insulin production.

Insulin is very important for storing nutrients and processing glucose (sugar). Our bodies simply can’t handle the insulin requirements demanded when we over consume grains on a daily basis.

Ingesting grains causes blood sugar levels to spike, causing a shock to your system. Both simple and complex carbs get converted into glucose but at different rates once they enter the body. Your pancreas compensates for this excess glucose in the bloodstream by secreting excessive levels of insulin. Over stressing your insulin response system over the years can lead to metabolic disorders like type 2 diabetes, obesity, cardiovascular disease, and some cancers.

We could tell everybody to completely eliminate grains out of their diet, and those who do will thrive… It will lower their blood pressure, decrease cholesterol levels, dramatically improve energy levels, burn off belly fat, reduce inflammation, promote weight loss, alleviate dermatitis, acne, and digestive disturbances etc. Those who chose to stay on the grain train should choose their grains wisely and infrequently. Soak and sprout your grains, buy sprouted grains, and seek non-grain, high protein alternatives like almond flour and coconut flour for your baked goods. By changing your diet and lifestyle you can take an active role in improving your digestive system, which in turn, will improve your immune system, and your ability to resist chronic diseases. As for the food pyramid, we should turn it upside down and get our daily fiber and essential nutrients from foods like vegetables, fruits, proteins and healthy fats which offer a much higher nutrient profile without the drawbacks seen with grains. This decrease in grain consumption will allow you to create a new relationship with grains and will help manage your blood sugar, control insulin levels and decrease systemic inflammation, which is essential to restoring health and slowing the aging process.

Forget What You Know About Probiotics and Gut Health!

As I alerted you earlier this week, I’m writing to share some exciting information and clinical results about a product that I discovered and have been researching for the past two years. More importantly, this discovery has already yielded amazing results! Let me begin by telling you a couple of stories:

J.S. is a 53 year-old female with a history of transient irritable bowel attacks. The episodes usually lasted between two and three weeks, with the symptoms gradually subsiding over time. The most in-depth research ever conducted on probiotics

Before I tell you more about Megaspore Biotic, I have to share the research, which will provide the context for your understanding why this is a major breakthrough.

Five years ago, the National Institute of Health (NIH) began the Human Microbiome Project (HMP). Two hundred scientists from 83 of the world’s top universities contributed their expertise to research and better understand the bacteria living in and on our bodies, and the role it plays in health and disease. The findings, which were first published in 2012, were astonishing. Here is what we NOW know:

  • We are more bacteria than human – 10 trillion human cells vs. 100 trillion bacteria cells.
  • There are more than 1,000 different species of microorganisms in each individual’s digestive tract out of nearly 35,000 possible species.
  • Bacterial genes outnumber human genes 150-to-1 (25,000 human genes vs. 3.3 million microbial genes).
  • No two individuals have the exact same composition – not even twins.
  • Disease is associated with a disruption of the ecology of the gastrointestinal (GI) tract (Crohn’s disease, IBS, asthma and even obesity)

In an effort to understand the role of supplemental probiotics (beneficial bacteria that can enter and inhabit the gut) in health and disease, the researchers recognized the need to define the function of the probiotic. These criteria are the result of millions of dollars of research; the most in-depth probiotic research ever conducted:

  • In order to act as a probiotic, the bacteria must be a species that normally occurs in the individual’s digestive tract. It must have a position in the microbiota or it won’t be able to settle and colonize.
  • Probiotics offer benefits through their stimulatory effects on the immune system in the gut and by reaching a critical mass to produce beneficial compounds. To be of benefit, it must have higher numbers than what naturally exists in the gut to colonize and cause stimulation.
  • Supplemented probiotics, by evolution, should naturally occur in the environment (where they gain exposure to the host) and be stable both in the environment and the GI tract.

Results that can’t be denied

You may be surprised to learn that based on these criteria, every commercially available probiotic currently sold in drugstores, physicians’ offices, and local health food stores don’t fit the bill. Lactobacillus sp. and bifidobaceter sp. are the dominant probiotic strains in commercially available probiotic supplements and commonly added to foods. While it’s true that these bacteria do occur naturally in the intestinal tract, there are a few additional facts that the research brought to light.

The populations of Lactobacillus sp. and bifidobaceter sp. are first introduced to our systems via our mothers – through natural (vaginal) childbirth and breast-feeding. They are GI tract anaerobes, meaning they can’t sustain themselves in an oxygen-rich environment outside of the GI tract.

Secondly, these are some of the most predominant organisms in our digestive system with upwards of 20 trillion of these bugs in an average intestinal tract. In order for probiotics to have an immune-stimulating effect they need to be supplemented in concentrations higher than what naturally exists. The best of these commercially available products claim upwards of 100 billion organisms per dose, which isn’t even close to the 20 trillion already there. Lactobacillus sp. and bifidobaceter sp., even at dosages of 100 billion, simply can’t offer healthy immune-stimulation from dose-to-dose. It’s like adding a single drop of dye to a swimming pool and hoping to change the color of the water in the entire pool.

During studies of the oral administration of Lactobacillus sp., HMP researchers found that there was absolutely no impact on the concentrations of these organisms in the GI tract. They concluded that close to 100 percent of the lactobacilli were destroyed by the stomach acid before they could even reach the lower GI tract.

The bottom line: Lactobacillus sp. and bifidobaceter sp. cannot survive the harsh conditions of the stomach when supplemented orally and their numbers are influenced most by the birth process and the first year of life. After that, the numbers stay pretty constant throughout our lives. Consequently, Lactobacillus sp. and bifidobaceter sp should not be classified as probiotics but rather be classified as normally occurring organisms that inhabit our gut (gut commensal organisms).

HMP turns Probiotic Industry Upside Down

It is very important to say at this time that Lactobacillus sp. and bifidobaceter sp products have been somewhat beneficial. I have used them for years and my own experience has taught me that some patients benefited from the supplementation of these organisms. I believe that future research will show that these organisms, even when they are dead, will positively impact the pH of the intestinal tract, which can be very beneficial to someone with digestive symptoms.

At the same time, this information also explains the limited benefits experienced after oral supplementation of Lactobacillus sp. and bifidobaceter sp, and why they don’t last long after supplementation stops. The transient effect associated with pH changes requires daily dosing with no long-term benefits once supplementation ceases, and the benefits offer relief for a very small number of conditions. Whatever the reason may be, the facts are the facts. Lactobacillus sp. and bifidobaceter sp supplements are not capable of consistently modulating immune function in the gut, and immune modulation is a key quality for a true probiotic organism. Remember: Nearly 80 percent of our immune function is in the GI tract. True probiotics play a major role in its form and function. Thus, if a probiotic can’t effectively enter, colonize and create the immune stimulation, by definition, it’s not a probiotic!

Based on the results of the Human Microbiome Project’s research of bacteria, the crashing noise that you now hear is the probiotic industry turned upside down. Thankfully, the research also found the real answer.

Introducing Spore Bacteria

The answer is Spores! Spore-form bacteria are robust organisms that can survive the harsh environment of the stomach 100 percent intact. Through the evolutionary process, nature designed them to be transferred from human-to-human via the environment and food. They have evolved to be very stable in the environment and also to colonize the GI tract very effectively. In fact, studies have shown that certain developments of the human immune system specifically require spores.

What do we know about spores?

  • They are found all over the environment (soil, vegetation, dust, rocks, aqua-environments, digestive systems of insects, marine life, mammals, etc.) which means as a probiotic they are evolutionarily supported – a true probiotic.
  • Spores remain dormant until they get to the intestinal tract and then they colonize the bowel.
  • They are universally found in the human microbiota. They are normal organisms of our digestive tract.
  • There is a LONG history of use in industries where efficacy is closely measured, for example the pharmaceutical and agriculture industries.
  • Human studies have proven spores to be extremely safe and efficient.

Spore bacteria that are not in spore state will be destroyed by the stomach acid just like any other bacteria. The key is cultivating the spores using technology that ensures that the bacteria are maintained in spore form until it gets past the stomach and into the small intestine.

Small amounts of trans fat occur naturally in foods such as milk, butter and animal meat. But this type of trans fat doesn’t seem to be as harmful to your health as the trans fat found in commercially prepared baked goods, fried foods and snack foods.

Read food labels carefully and check for trans fat. Food labels must list trans fat, total fat, saturated fat and cholesterol. Trans fat will appear in the ingredient list as “hydrogenated vegetable oil” or “partially hydrogenated vegetable oil.”

When you read a nutrition label, keep in mind that companies are allowed to list the amount of trans fat as “0 grams” if the product contains less than 0.5 grams of trans fat per serving. This means that your food may still contain some trans fat even if the nutrition label says “0 grams” per serving, be aware of foods that say “trans fat free” on the package. Steps to Create Lasting Changes

With the New Year just around the corner, many people are beginning to think about their annual list of New Year’s Resolutions. You know the list – change the diet, exercise more, drink less, quit smoking, save more money, be kind to the in-laws, etc. For some of us, the effort to change rarely lasts longer than 30 days. However, we want to help you stay on track with your goals by providing specific steps you can take to create lasting changes in 2013.

Dr. Joe Dispenza ( is a leading brain and change expert, as well as author of several best-selling books, including Breaking the Habit of Being Yourself . Dr. Dispenza’s research has shown that the “brain is the organ of change.” When we learn even one new bit of information, he writes, tiny brain cells make new connections within the brain, a concept in neuroscience referred to as neuroplasticity. To make lasting change, Dr. Dispenza says, “we have to mentally rehearse daily what it would be like to experience the transformation” so that the internal changes necessary to achieve the goals can take place.

One of the most effective ways to create lasting change is to “mentally rehearse” using daily affirmations.

What are Affirmations?

Scientists have now been able to demonstrate that there’s a direct link between our thoughts and our physical, emotional and spiritual well-being. Thoughts are a form of energy. Every thought you have has either a high vibration of energy (positive thoughts) or a low vibration of energy (negative thoughts). Affirmations are a conscious effort to positively reprogram the subconscious mind (storehouse of thoughts, feelings and beliefs) in order to create lasting change.

Affirmations are positive, present tense statements, which specifically detail what you intend to create in your life. Writing down an affirmation is like planting a seed within the subconscious mind; saying the affirmation aloud is akin to watering it. Change begins to blossom and then flourish in your life. You know an affirmation is effective if it resonates with your heart and gives you goose bumps when you read it or say it aloud.

Tips for Creating Effective Affirmations

The key to creating effective affirmations is beginning with an “attitude of gratitude” for everything that happens. That may be the toughest pill to swallow. However, the truth is every experience we have, both positive and negative, makes us grow. When we respond to every aspect of life with appreciation we open our hearts to all possibilities, and are open to learning the value of everything that happens to us.

You don’t necessarily have to believe your affirmation is possible. But by taking these extra steps, you can expedite change:

  • Set an intention: Make sure your affirmation is simple and clear, and includes action words, such as, “I will….” Instead of “I want….”
  • Be emotionally connected to the outcome: It’s important that you have an emotional connection to the affirmation – that you feel it in your heart when you read it or say it aloud. As Dr. Dispenza writes, fostering new brain cells creates the internal change necessary to support the external change.
  • Be ready to change: It’s hard to lose weight, for example, if you’re doing it because you “should” rather than because you’re passionate about having vibrant health.
  • Repeat the affirmation daily: Best-selling author, metaphysical teacher and healer Louise Hay persistently used affirmations and was able to heal from cancer. When reciting affirmations, she recommends looking in the mirror and gazing deeply into your own eyes.
  • Imagine the future:  Envision the outcome in your mind’s eye whenever you recite the affirmation. With gratitude, act as if your goal has already been achieved.

Write Your 2013 Affirmations:

  1. Begin with “I am happy and grateful for…
  2. State your affirmation as if it is already reality.
  3. Affirm what you want, rather than what you don't want. For example: "I am no longer sick,” or “I am no longer in debt.” Instead, affirm: "I am happy and grateful for the perfect health in body, mind and spirit that I am experiencing now,“ or “I am happy and grateful for the financial abundance I am experiencing now.” These statements reinforce your desired goal without confusing your subconscious mind with the mention of your current condition.

Five Healthy Tips to Help You Enjoy the Holiday Season

The holiday season is almost here! Beginning with Thanksgiving and continuing until New Year’s Day, there are 40 days and 40 nights of opportunities to eat, drink and be merry!

As you know, too much of a good thing can be detrimental -- sugar, alcohol and poor food choices can wreak havoc on the immune system. But you don’t have to crash and burn-out your health during the holidays. Instead, prepare to enjoy all of the fun and celebrations by following these five healthy lifestyle tips, which are both preventative and curative in the event you do overindulge:

1. Eat two servings of organic fruit and seven servings of organic vegetables every single day. The majority of fruit and vegetables are nutrient dense, high in fiber and low in calories. They also contain a number of essential vitamins and minerals that cannot be found in other types of foods.

Two servings of fruit and seven servings of vegetables will help the body maintain the alkaline pH it needs to fight pain, illness and fatigue. Sound like a lot of produce? You can easily achieve these goals by eating soups, salads or by drinking green drinks and smoothies.

2. Decipher and manage cravings. One of the biggest challenges during the holiday season is to manage food cravings.
