No-Bake Chocolate Coconut Snowballs

No-Bake Chocolate Coconut Snowballs

Ingredients:

4 cups unsweetened organic shredded coconut
2 Tbsp unrefined coconut oil
6 Tbsp pure maple syrup
4 Tbsp unsweetened coconut milk (I used an organic variety from a can)
1 tsp vanilla extract
1/4 tsp sea salt
1 cup organic dark chocolate, melted with 1 Tbsp unrefined coconut oil (the coconut oil makes the melted chocolate smooth)
Additional coconut for dusting if desired.

Instructions:

  1. Place shredded coconut and coconut oil into a food processor.
  2. Process on high speed, scraping down the sides occasionally, until it reaches an almost buttery consistency.
  3. Add the maple syrup, coconut milk, vanilla extract, and salt and process on high speed until ingredients are combined.
  4. Shape the coconut mixture into 1” balls.
  5. Place on wax paper, and refrigerate for at last an hour, or set in the freezer for 30 minutes.
  6. Once the coconut balls are very firm, melt the dark chocolate, and coconut oil in a small saucepan over medium heat for just a minute or two, stirring constantly.
  7. Once the chocolate is melted, carefully dip the coconut balls into the melted chocolate and sprinkle with a tiny bit of shredded coconut
  8. Allow the chocolate to harden by placing the coconut balls back into the refrigerator for 5-10 minutes.
  9. Store in a sealed container in the refrigerator or freezer, for up to a week.

All Disease Begins in the Gut - Hippocrates

This year is my 22nd year in practice and in the words of Jerry Garcia…what a long strange trip its been.  As my knowledge has grown over the years, the types of patients that seek my care have changed.  With allopathic medicine continuing to focus on suppressing symptoms and handing out toxic chemicals with horrible side effects many people sought my help to find the causative factors of their conditions.  The people that have put their trust in me over the years to help them find solutions to their health problems humble me.

Today, approximately 90% of my patients suffer from either a primary digestive issues such as gas, bloating, constipation, diarrhea, leaky gut, irritable bowel syndrome, Crohn’s disease, ulcerative colitis, candida infection, bacterial overgrowth, and acid reflux, or a secondary digestive issue which I’ll explain in the next paragraph.  The number one reason patients visit their doctor is for digestive complaints.  In addition to these patients I also started seeing more patients suffering from autoimmune conditions such as rheumatoid arthritis and hashimoto’s disease.  Many of these patients had horrible digestive symptoms in addition to their autoimmune diagnosis.  Looking for ways to positively influence their dysfunctional immune systems, I learned that upwards of 80% of the immune system resides in the digestive tract.  If I was going to be able to help these patients in any way I needed to find a way to help their digestion. I also saw first hand that patients with acne, eczema, psoriasis and dermatitis often had poor digestion as the source of their symptoms.  Then there were patients who presented with headaches, fatigue, and hormone imbalances and after a complete review of their condition I realized that, in some cases, their digestion was the source of their discomfort. These are examples of what I call secondary digestive issues…the main complaint is not a digestive issue but as soon as you start to dig around for the cause of their symptoms digestion quickly moves to the top of the list.  At some point I realized if I didn’t have an answer to effectively support digestion then maybe a career change was in order.

My search led me to probiotics.
On paper probiotics seemed to be my answer.  I went to the best conferences and listened to the brightest minds.  They taught me that reseeding the bowel with good bacteria was the solution I was looking for.  Supplementing my patients with billions of lactobacillus and bifidobacteria would correct the imbalance in the intestinal tract and solve all my patients primary and secondary digestive issues.  I jumped in with both feet.

It turned out to be a little bit different in practice than what all those smart guys said.
I would say overall my experience with probiotics was very much a mixed bag.  While I had some success using probiotics, it wasn’t uncommon for a supplement to work for a week or two, and then lose efficacy.  Even in patients who reported improvement if they missed a dose or tried to lower the dose the symptoms came right back.  So the results I saw were transient.  We weren’t making any lasting change we were just treating a symptom.  I saw infections that wouldn’t get better, no matter how many probiotics we threw at them. My frustration grew with every ineffective probiotic strain I tried.

New probiotic formulations came out every day, but none of them worked consistently.
Because of my experience formulating supplements, I had real questions and concerns about the quality and consistency of the probiotic supplements that were on the market. Some had one strain, while others had 15, but regardless, nothing gave me the results I was looking for.  Then the market shifted to “more is better”.  It seemed like overnight we went from recommending 5 billion to 20 billion to 50 billion to 100 billion.  I bought in that more must be better but clinically I just didn’t see the changes in patients.

I questioned how these bacteria would make it to the intestines alive.
In school I learned that the stomach is an incredible barrier to entry.  It doesn’t just let any bacteria pass into our intestines.  If it did then we would always be sick and most people would die from some type of infection.  I also learned that the bacteria that inhabit our intestines are anaerobic, which means they die if they touch oxygen.  If the probiotic company is telling me the bacteria is alive when it is in my hand before I swallow it then it can’t be anaerobic.  So even if these bacteria could magically get past the stomach acid how could it live in an oxygen free environment in the gut.  Plus, where did caveman get his probiotics?  He didn’t have a refrigerated section at Whole Foods to shop from.  Nowhere could he access these bacteria in his environment.  It didn’t make sense.  As more research came out it became clear that this reseeding theory was just not supported by science.

Then something interesting crossed my desk…
A few years ago an article on Bacillus spores was passed to me from a colleague. I was immediately fascinated. Bacillus spores provided an answer to all of my concerns.  First, they are safe. Bacillus spores were the first prescription probiotics in the 1950’s.

Because Bacillus probiotics develop a hard shell (an endospore), they are highly resistant to UV and gamma radiation, high and low temperatures, and acidic conditions found in the stomach. Gut model studies proved they survived the acidic stomach to populate in the intestines.

We’re Soaking in the Vitamin D, What About You?

Spring is upon us. And, with spring, comes Spring Break for many of us. If you are heading out to a sunny destination, be sure to soak up the sun responsibly with lots of sunscreen and water. For those that are not headed to a sunny locale, where you will be getting a good dose of sunshine (approximately 10 minutes with your head, arms and legs uncovered), you should consider a vitamin D3 supplement.

Sun exposure helps our bodies to produce vitamin D, a critical nutrient that is essential for health and vitality. If we don’t get enough sun, or don’t supplement adequately, we risk developing a vitamin D deficiency.

Shockingly, one out of every 2 people in the world are deficient in vitamin D, and deficiency in this nutrient is considered a substantial risk factor for developing chronic disease or death. Thankfully, vitamin D supplements reduce your risk of disease and death and are very easy to take.

My preference is for  PureBalance Micellized Vitamin D3, a highly absorbable liquid form that both children and adults find easy to take.  I usually order labs to see what someone’s level of vitamin D is before recommending a dosage, but for most people 3,000 IU/day is a good amount.

One of the benefits to having a normal vitamin D level is that D works with your body to increase the absorption of calcium. Fight your Allergies Naturally

If you’re one of the 50 million Americans who suffer from allergies, you know how annoying and disrupting they can be. From a simple case of the sniffles to dry mouth, fatigue, and even trouble breathing, seasonal allergies can really cut in to your enjoyment of spring.Thankfully, there are some really simple things that you can do to combat allergies before they start.

Make sure to drink plenty of water.

Water is critical to helping your body detox as well as thinning the mucus in your sinus cavities. Everyone’s needs for water are different. A simple way I use with my patients is to take their weight, divide it in two, and suggest that they drink that many ounces of water each day. For example, if someone weighs 140 pounds, they should drink at least 70 ounces (equivalent to nearly 9 cups) of filtered water daily.

Try saline nasal irrigation.

A 2012 systematic review and meta-analysis of 10 studies on saline nasal irrigation showed a beneficial effect on nasal symptoms, a reduction in medication use, and an increase in the quality of life. I like to include oregano in my nasal rinse as well as saline (check out our SinuClenz product), because this appears to do a better job of decreasing inflammation and reducing symptoms. If you do use nasal irrigation, make sure you regularly clean your rinsing device. I would also suggest using filtered water rather than tap water.

Get plenty of vitamin C.

Vitamin C is one of those essential nutrients that can’t be synthesized by humans and therefore needs to be present in the diet. Vitamin C is an important immune system supporter and a potent antioxidant as well as having the ability to deactivate histamine.
Great food sources of vitamin C include citrus fruits, berries, watermelon, mango, and peppers.

Take your probiotics.

You may not immediately think of probiotics as a first line defense against environmental allergies, but I do! Beneficial bacteria like those found in Megasporebiotic help to calm down the immune response which is at the heart of your symptoms. Although the normal dose of Megasporebiotic is 2 capsules per day, I will often encourage patients to increase their dose temporarily during periods of stress, illness, travel, or the onset of seasonal allergies! Are you suffering from Inflammation?

5 Inflammation-Causing Foods and 1 Easy Fix

The subject of Inflammation has been in the news quite a lot lately, and for good reason. Inflammation plays a role in most of the chronic diseases we see today, including heart disease, cancer, Alzheimer’s, and even acne!

Temporary inflammation is good—our bodies depend on inflammatory processes to heal injuries and fight off infection. But when acute inflammation turns chronic, the immune system starts attacking normal cells and the normal healing process turns harmful.

One great way to reduce inflammation is to reduce or remove the following 5 inflammation producing foods from your diet. But sometimes that isn’t enough. Read to the end to discover my go-to solution for inflammation!

  1. Sugar

Sugar is at the top of my list for inflammatory foods, and it’s one of the most prevalent in our diets. The average American consumes 32 teaspoons of added sugars daily! This increased sugar consumption releases inflammatory messengers called cytokines which can wreak havoc in your body. To avoid sugars, eat whole, non-processed foods. When you do eat processed foods, read the labels to avoid any word ending in “ose” such as fructose or sucrose.

  1. Trans Fats

Trans fats are known to trigger systemic inflammation, and even small quantities can be problematic. Most trans fats are found in fast foods, processed snack foods, cookies, doughnuts, and most stick margarines. Check food labels for the presence of trans fats, but be aware that food products with less than 0.5 grams per serving do not need to list trans fat on the food label. Instead check the ingredient list for partially hydrogenated oils—these are a sure sign that trans fats are present.

  1. Oils with Omega-6 Fatty Acids

Though our bodies need omega 6 fatty acids for normal growth and development, we often don’t get a good balance of omega-6 and omega-3 fatty acids. Eat too many foods containing omega-6 fatty acids and the body starts to produce pro-inflammatory chemicals. Avoid cooking with oils such as corn, safflower, sunflower, soy, peanut, and vegetable. You may also find these oils in mayonnaise and salad dressings.

  1. Refined Carbohydrates

Foods made with white flour, white rice, and white potatoes, as well as many other cereal grains have high levels of refined carbohydrates. Processed carbohydrates send your blood sugar into the stratosphere, and also create advanced glycation end (AGE) products that boost inflammation. Picture a candied apple: the sugar that forms around the apple hardens in the same way that advanced glycation products harden around nerves and arterioles, restricting blood supply and creating dysfunction.

  1. Gluten and casein

Gluten is a protein found in wheat, rye, and barley whereas casein is found in dairy products. Both substances can promote inflammation and should be avoided, especially by people who are prone to inflammation.

While you should work to remove these inflammatory foods from your diet, no one eats perfectly 100% of the time. Even if your diet is perfect, often stressors and environmental toxins can lead to inflammation.

1 Easy Fix

One of the products I love to use with people who suffer from inflammation is Omax3 Professional Strength, a professional strength omega-3 supplement.
