What’s the Skinny on Canola oil?

Canola oil is made of rapeseeds, a member of the mustard family. Most rapeseed is cultivated in China, Canada and India.

Canola oil is typically extracted and refined using high heat, pressure, and petroleum solvents such as hexane. Most canola oil undergoes a process of caustic refining, degumming, bleaching, and deodorization, all using high heat and questionable chemicals.  The end result of all of this refining and processing are oils that are highly inflammatory and potentially contribute to heart disease, weight gain, and other degenerative diseases. Additionally, all of this high heat, high pressure processing with solvents actually forces some of the omega-3 content of canola oil to be transformed into trans fats.

As you can see from the details above on how canola oil is processed, it is barely any healthier for you than other junk oils like soybean oil or corn oil.  The bottom line is that it is inflammatory oil in your body and should be avoided as much as possible.
The reason that extra virgin olive oil is good for you is that it is cold pressed without the use of heat and solvents to aid extraction. EVOO also contains important antioxidants that help protect the stability of the oil.

The only canola oil that might be reasonable is if it is  "cold pressed" and organic. Most canola oil is NOT cold pressed or organic, so you might as well choose oils that you know are healthier.

In the Bayne household we’ll stick to extra virgin olive oil, coconut oil, grass-fed butter and ghee for our cooking needs - perhaps you should too!

What is Gluten?

Late night television host Jimmy Kimmel poked fun of gluten-free diets last week by asking “people on the street” the question: “What is gluten?” Click here to watch it.

As you can see, the answers were pretty comical! Since May is Celiac Awareness Month, I thought this would be a great time to discuss gluten, gluten intolerance, gluten sensitivity, and how it impacts the body.

Let’s start with the definition from the Oxford Dictionary:

A substance present in cereal grains, especially wheat, responsible for the elastic texture of dough. A mixture of two proteins, it is known to cause illness in people with celiac disease.

The New England Journal of Medicine reports that Celiac disease is one of the most common, lifelong disorders in both Europe and the United States, and it impacts millions of people. Celiac is an autoimmune, digestive disease, caused by gluten. Gluten damages the villi (small hair-like projections) in the small intestine. This damage means that the small intestine is unable to absorb nutrients from food. Each time a person eats a gluten-containing food, his or her body essentially attacks itself. This attack creates inflammation.

The breakdown of these villi doesn’t occur over night. Evidence suggests that intestinal damage from ongoing exposure to gluten develops gradually. Some people suffer as long as eight to 10 years before being diagnosed. In the interim, the body breaks down.

The primary culprit behind this inflammatory response is gluten-intolerance and gluten-sensitivity. The intestines of a person who is gluten-intolerant are on fire like a roaring flame, while the intestines of someone who is gluten sensitive are more like a smoldering fire. Either way THEY ARE ON FIRE!

At the same time, gluten sensitivity is not exclusively a gut problem. There are more than 300 different symptoms associated with it, ranging from diarrhea and abdominal pain, to weight gain and joint pain. The affected organs include the brain, kidneys, stomach, intestines, liver, and gallbladder. The brain is particularly vulnerable, and associated symptoms include brain fog, migraines, multiple sclerosis, ADHD, autism, depression, Parkinson’s disease, Alzheimer’s disease, depression and chronic fatigue syndrome. Also, gluten sensitivity is associated with asthma, allergies and skin rashes.

The most prescribed therapy for celiac disease and non-celiac/gluten-sensitivity is a gluten-free diet. However, unless the underlying inflammation is addressed, the body’s response to dietary changes will be limited. Specific nutrients also are needed In order to get the inflammation under control.

Are Grains Really Good For You?

We are led to believe that grains are an essential element in a healthy diet. We are told that eating high-fiber whole grains may help reduce the risk of heart disease, prevent or treat diabetes, and reduce cholesterol. Grains occupy the entire base and largest space on the food pyramid.  Should we question whether they are healthy for us?

Interestingly, scientific and historical research shows that humans have not always consumed grains, and in fact some would argue the body was not designed to function on grains at all! Based on this research we have asked our patients to reduce their intake of grains and in some cases we are suggesting to go grain free. Grains include processed and whole grain products such as wheat, barley, rye, oats, spelt, teff, rice, amaranth, millet, buckwheat, sorghum, and corn. These grains are used to make products like cereal, crackers, cookies, breads, and pasta. Grains contain anti-nutrients and cause big fluctuations in insulin levels, which promotes inflammation in the body.  Let’s discuss each of these issues in detail.

Reason #1:

Grains contain anti-nutrients.

Anti-nutrients are elements within a food that either prevent or disrupt the proper digestion and absorption of nutrients contained in that food. The more grains you eat the more anti-nutrients you have in your diet. If you eat cereal for breakfast, a sandwich for lunch, and a bowl of pasta for dinner you are being exposed to a huge amount of anti-nutrients.  Phytates are anti-nutrients. Phytates make minerals bio-unavailable as they bind to the minerals in our foods and prevent their absorption. Minerals like calcium, magnesium, iron, and zinc are crucial for health and healing, but in the presence of phytates they are blocked from being absorbed by the body. This causes mineral deficiency which can result in a wide variety of symptoms that include, but are not limited to, suppressed immunity, fatigue, insomnia, irritability, heart palpitations, muscle cramps, constipation, hormonal imbalance, restless leg syndrome, muscle spasms, asthma, migraines, PMS and infertility.

Lectins are anti-nutrients that are sugar-binding proteins resistant to digestive enzymes and stomach acid. Lectins stick to the cells in the lining of the small intestines causing a weakness in digestive function. They are sticky like glue, and their stickiness is what clogs your digestive tract and blocks the absorption of nutrients. Overconsumption of lectin rich foods can build up over the years and cause sludge to form on your bowel walls keeping the intestines in a constant state of inflammation.

One way to address the problem of anti-nutrients in grains is to soak and/or sprout them. Some cultures prepare their grains by sprouting and soaking them before preparation and eating. This process dramatically reduces anti-nutrients and makes the actual nutrients present in grains available for absorption. If sprouting and soaking your own grains is not an option there are many health food stores and supermarkets that are already fully stocked with sprouted-grain products. Sprouted-grain breads are easy to find in the freezer section of most grocery stores.


Reason #2:

Grains contain gluten.

Gluten is the protein component in wheat, rye, and barley.  It makes pizza dough stretchy, gives bread its spongy texture, and is used to thicken sauces and soups. The latest research from the Centers for Disease Control (CDC) estimates that around 1% of the population has Celiac’s disease, an autoimmune response to gluten that damages the small intestine. A Celiac patient reacts to trace amounts gluten in their diet. Although only a small percentage of people have Celiac’s, research shows a larger percentage of the population is sensitive to gluten and wheat. Some researches estimate that 30-40% of people of European decent are gluten intolerant. In addition to that Allopathic medicine has recently recognized a new group of diagnoses called non-celiac gluten sensitivity disorders. These conditions include digestive issues, cognitive and behavioral disorders, and neurological conditions that are caused by immune reactions to gluten in the diet.  Unfortunately for many, the long-term results of consuming gluten can cause permanent damage to their immune and nervous systems.

Gluten free grains such as millet, amaranth, rice, buckwheat, sorghum, corn and teff also contain anti nutrients, cause insulin fluctuations and promote inflammation in the body.  We recommend these grains in limited amounts. Pure oatmeal does not contain gluten, but most oatmeal brands on the market today are not pure — they contain oats that have been cross-contaminated with small amounts of wheat, barley and/or rye.

Reason # 3:

Grain consumption causes spikes in insulin production.

Insulin is very important for storing nutrients and processing glucose (sugar). Our bodies simply can’t handle the insulin requirements demanded when we over consume grains on a daily basis.

Ingesting grains causes blood sugar levels to spike, causing a shock to your system. Both simple and complex carbs get converted into glucose but at different rates once they enter the body. Your pancreas compensates for this excess glucose in the bloodstream by secreting excessive levels of insulin. Over stressing your insulin response system over the years can lead to metabolic disorders like type 2 diabetes, obesity, cardiovascular disease, and some cancers.

We could tell everybody to completely eliminate grains out of their diet, and those who do will thrive… It will lower their blood pressure, decrease cholesterol levels, dramatically improve energy levels, burn off belly fat, reduce inflammation, promote weight loss, alleviate dermatitis, acne, and digestive disturbances etc. Those who chose to stay on the grain train should choose their grains wisely and infrequently. Soak and sprout your grains, buy sprouted grains, and seek non-grain, high protein alternatives like almond flour and coconut flour for your baked goods. By changing your diet and lifestyle you can take an active role in improving your digestive system, which in turn, will improve your immune system, and your ability to resist chronic diseases. As for the food pyramid, we should turn it upside down and get our daily fiber and essential nutrients from foods like vegetables, fruits, proteins and healthy fats which offer a much higher nutrient profile without the drawbacks seen with grains. Forget What You Know About Probiotics and Gut Health!

As I alerted you earlier this week, I’m writing to share some exciting information and clinical results about a product that I discovered and have been researching for the past two years. More importantly, this discovery has already yielded amazing results! Let me begin by telling you a couple of stories:

J.S. is a 53 year-old female with a history of transient irritable bowel attacks. The episodes usually lasted between two and three weeks, with the symptoms gradually subsiding over time. When J.S. came to see me, she had been experiencing acute abdominal pain, bloating, and diarrhea for three days. She was given Megaspore Biotic. The most in-depth research ever conducted on probiotics

Before I tell you more about Megaspore Biotic, I have to share the research, which will provide the context for your understanding why this is a major breakthrough.

Five years ago, the National Institute of Health (NIH) began the Human Microbiome Project (HMP). Two hundred scientists from 83 of the world’s top universities contributed their expertise to research and better understand the bacteria living in and on our bodies, and the role it plays in health and disease. The findings, which were first published in 2012, were astonishing. Here is what we NOW know:

  • We are more bacteria than human – 10 trillion human cells vs. 100 trillion bacteria cells.
  • There are more than 1,000 different species of microorganisms in each individual’s digestive tract out of nearly 35,000 possible species.
  • Bacterial genes outnumber human genes 150-to-1 (25,000 human genes vs. 3.3 million microbial genes).
  • No two individuals have the exact same composition – not even twins.
  • Disease is associated with a disruption of the ecology of the gastrointestinal (GI) tract (Crohn’s disease, IBS, asthma and even obesity)

In an effort to understand the role of supplemental probiotics (beneficial bacteria that can enter and inhabit the gut) in health and disease, the researchers recognized the need to define the function of the probiotic. These criteria are the result of millions of dollars of research; the most in-depth probiotic research ever conducted:

  • In order to act as a probiotic, the bacteria must be a species that normally occurs in the individual’s digestive tract. It must have a position in the microbiota or it won’t be able to settle and colonize.
  • Probiotics offer benefits through their stimulatory effects on the immune system in the gut and by reaching a critical mass to produce beneficial compounds. To be of benefit, it must have higher numbers than what naturally exists in the gut to colonize and cause stimulation.
  • Supplemented probiotics, by evolution, should naturally occur in the environment (where they gain exposure to the host) and be stable both in the environment and the GI tract.

Results that can’t be denied

You may be surprised to learn that based on these criteria, every commercially available probiotic currently sold in drugstores, physicians’ offices, and local health food stores don’t fit the bill. Lactobacillus sp. and bifidobaceter sp. are the dominant probiotic strains in commercially available probiotic supplements and commonly added to foods. While it’s true that these bacteria do occur naturally in the intestinal tract, there are a few additional facts that the research brought to light.

The populations of Lactobacillus sp. and bifidobaceter sp. are first introduced to our systems via our mothers – through natural (vaginal) childbirth and breast-feeding. They are GI tract anaerobes, meaning they can’t sustain themselves in an oxygen-rich environment outside of the GI tract.

Secondly, these are some of the most predominant organisms in our digestive system with upwards of 20 trillion of these bugs in an average intestinal tract. In order for probiotics to have an immune-stimulating effect they need to be supplemented in concentrations higher than what naturally exists. The best of these commercially available products claim upwards of 100 billion organisms per dose, which isn’t even close to the 20 trillion already there. Lactobacillus sp. and bifidobaceter sp., even at dosages of 100 billion, simply can’t offer healthy immune-stimulation from dose-to-dose. It’s like adding a single drop of dye to a swimming pool and hoping to change the color of the water in the entire pool.

During studies of the oral administration of Lactobacillus sp., HMP researchers found that there was absolutely no impact on the concentrations of these organisms in the GI tract. They concluded that close to 100 percent of the lactobacilli were destroyed by the stomach acid before they could even reach the lower GI tract.

The bottom line: Lactobacillus sp. and bifidobaceter sp. cannot survive the harsh conditions of the stomach when supplemented orally and their numbers are influenced most by the birth process and the first year of life. After that, the numbers stay pretty constant throughout our lives. Consequently, Lactobacillus sp. and bifidobaceter sp should not be classified as probiotics but rather be classified as normally occurring organisms that inhabit our gut (gut commensal organisms).

HMP turns Probiotic Industry Upside Down

It is very important to say at this time that Lactobacillus sp. and bifidobaceter sp products have been somewhat beneficial. I have used them for years and my own experience has taught me that some patients benefited from the supplementation of these organisms. I believe that future research will show that these organisms, even when they are dead, will positively impact the pH of the intestinal tract, which can be very beneficial to someone with digestive symptoms.

At the same time, this information also explains the limited benefits experienced after oral supplementation of Lactobacillus sp. and bifidobaceter sp, and why they don’t last long after supplementation stops. The transient effect associated with pH changes requires daily dosing with no long-term benefits once supplementation ceases, and the benefits offer relief for a very small number of conditions. Whatever the reason may be, the facts are the facts. Lactobacillus sp. and bifidobaceter sp supplements are not capable of consistently modulating immune function in the gut, and immune modulation is a key quality for a true probiotic organism. Remember: Nearly 80 percent of our immune function is in the GI tract. True probiotics play a major role in its form and function. Thus, if a probiotic can’t effectively enter, colonize and create the immune stimulation, by definition, it’s not a probiotic!

Based on the results of the Human Microbiome Project’s research of bacteria, the crashing noise that you now hear is the probiotic industry turned upside down. Thankfully, the research also found the real answer.

Introducing Spore Bacteria

The answer is Spores! Spore-form bacteria are robust organisms that can survive the harsh environment of the stomach 100 percent intact. Through the evolutionary process, nature designed them to be transferred from human-to-human via the environment and food. They have evolved to be very stable in the environment and also to colonize the GI tract very effectively. In fact, studies have shown that certain developments of the human immune system specifically require spores.

What do we know about spores?

  • They are found all over the environment (soil, vegetation, dust, rocks, aqua-environments, digestive systems of insects, marine life, mammals, etc.) which means as a probiotic they are evolutionarily supported – a true probiotic.
  • Spores remain dormant until they get to the intestinal tract and then they colonize the bowel.
  • They are universally found in the human microbiota. They are normal organisms of our digestive tract.
  • There is a LONG history of use in industries where efficacy is closely measured, for example the pharmaceutical and agriculture industries.
  • Human studies have proven spores to be extremely safe and efficient.

Spore bacteria that are not in spore state will be destroyed by the stomach acid just like any other bacteria. The key is cultivating the spores using technology that ensures that the bacteria are maintained in spore form until it gets past the stomach and into the small intestine.
